Chocolate Chip Cookie Bars
Chocolate Chip Cookie Bars are a deliciously chewy and easy-to-make dessert that are perfect for any occasion. Using common ingredients, whip up a batch of these sweet treats in no time.
The combination of sweet, buttery dough and rich chocolate chips is hard to resist.
That’s probably why chocolate chips cookies are the most popular of all cookies.
But here, you’ve got these treats as bars, which let’s you cut them big or small. Or, both!
Making Chocolate Chip Cookie Bars
Let’s start by prepping the baking dish. You really want to line the dish with parchment paper, or at least foil.
Using non-stick spray, or shortening and flour isn’t as effective.
I’d hate for you to have to wrestle those bars out of there.
So, getting started, melt the butter and set it aside to cool while making the cookie dough.
Then, in a medium bowl mix the dry ingredients together: flour, corn starch, baking soda, and salt.
Next, grab a large bowl and add both the sugars, the eggs, vanilla, and then add the melted butter.
Mix this up good, then stir in the dry ingredients. This is your basic dough.
Before adding the chocolate chips to the dough, measure out 1/4 cup or so.
Then dump the remaining chips into the dough and stir until evenly distributed.
Spread the dough in your prepared baking dish, then top with the reserved 1/4 cup chips.
Baking
Bake for about 34 – 38 minutes in a preheated oven set at 350°.
You’ll know they’re done when the top is golden brown.
It’s hard to use the toothpick test on this recipe.
Mostly, because when you pull out the toothpick, it’s usually covered in melted chocolate, which isn’t very helpful, so I skip it.
Cooling before cutting
If you can wait that long, and I didn’t, allow the bars to completely cool before cutting into them.
If you want to serve them warm, (Oh! with ice cream!), the bars will not have set up.
In other words, they will have the consistency similar to a hot apple pie.
You know how when you cut into a hot apple pie and the filling pours out a little?
It’s like that. So scrumptious! I can’t wait for you to make yours.
Also, if you want to cut perfect little squares, you can refrigerate the bars a bit for cleaner lines.
Otherwise, the bars can stay on the counter in a sealed container for about 5 days. They also freeze well.

Chocolate Chip Cookie Bars
Ingredients
- 3/4 cup unsalted butter, melted and cooled
- 2 1/4 cups all-purpose flour
- 1 Tbsp. corn starch
- 1 tsp. baking soda
- 1 tsp. salt
- 1 cup light brown sugar
- 2/3 cup granulated sugar
- 2 large eggs
- 1 tsp. vanilla extract
- 2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 350°. Line an 8 x 8" baking dish with parchment paper.
- In small bowl, melt butter and set aside to cool.
- In medium bowl, mix together flour, corn starch, baking soda, and salt. Set aside.
- In large bowl, combine brown sugar, sugar, eggs, vanilla, and melted butter. Mix until well combined.
- Mix in dry ingredients.
- Reserve 1/4 cup chocolate chips. Stir remaining chips into batter. Spread batter evenly into prepared dish, then top with reserved chips.
- Bake for 34 - 38 minutes. Top should be golden brown.
- Allow bars to cool completely so they have time to set up before cutting. Enjoy!
