Mini Breakfast Tostadas

These are a hit on any breakfast or brunch table. Mini Breakfast Tostadas are a crispy little tortilla loaded with refried beans, scrambled eggs, and salsa , plus anything else you want to add as a topping. For instance, crumbled bacon certainly, but also shredded cheese, then a sprinkle of cilantro. Delicious!

Mini Breakfast Tostadas are fun to set up as a tostada bar where everyone can add their favorite toppings. Start with the base, then after that, they’re on their own.

As a result, everyone walks away from the table happy and full. Win win.

Making Mini Breakfast Tostadas

Start by crisping up the tortillas.

Preheat the oven to 350° and lay out the tortillas on a cookie sheet in a single layer.

Then, brush a little olive oil over the tortillas, and bake for about 10 – 12 minutes, or until they’re crispy.

You can tell by looking at them that the edges are just starting to curl up.

While the oven is still hot, try Easy Baked Bacon. In short, baked bacon keeps your stove top clean and the bacon turns out perfectly crispy.

Next, heat the refried beans while you get the toppings out.

The toppings can be anything you like to eat, but keep in mind that a street taco is only about 3 1/2″ wide, so the toppings can’t be too big.

For instance, if you want to add bacon, and who doesn’t, you’ll have to crumble the bacon.

Also, if everyone wants cheese on them, you can add it to the scrambled eggs when you’re cooking them.

Otherwise, serve the shredded cheese after the eggs at the tostada bar so the cheese melts over the warm eggs.

Other toppings could be diced green onion, salsa or pico de gallo, jalapeño slices, guacamole, or fresh cilantro to name a few.

Some people even put ketchup on their eggs. Gross, I know, but whatever floats your boat, right?

So, with the tortillas done, the beans are hot, and the toppings are out, all that’s left to do now is to scramble the eggs.

So let’s talk scrambled eggs. Add milk? Add water? There are a lot of opinions out there.

I recommend you do whatever you usually do.

Some people add milk for creamier eggs. Some add water for fluffier eggs. Gordon Ramsay adds creme fraiche.

Another chef says to not add anything, except butter.

So, that’s what I do. I melt the butter while I whisk the eggs with a fork, then add salt and pepper.

Uncomplicated; just how I like it.

So, now that everything’s cooked, let’s set up the tostada bar.

From the starting point, have the crispy corn tortillas and the beans. The beans go on first.

Second, have the scrambled eggs.

Everything else is pretty much up to you, depending on what you’ve put out.

Think bigger items go on first, smaller on the very top; like a pyramid.

Then eat. Yay! My favorite part.

Ingredients

Tostada:

  • 12 street taco corn tortillas (about 3 1/2")
  • 2 tsp. olive oil
  • 2 cups refried beans, heated
  • 1 Tbsp. butter
  • 6 large eggs, lightly scrambled
  • salt and pepper to taste
  • 1 cup salsa, (or pico de gallo)

Toppings:

  • shredded cheese, diced cilantro, bacon (cooked and crumbled), diced green onion, guacamole, jalapeño slices, diced black olives, etc.

Instructions

Tostada:

  • Preheat oven to 350°. Place tortillas on baking sheet and lightly brush on olive oil. Bake for approx. 10 minutes, or until crisp.
  • Have beans heating on the stove. Prepare toppings you want (i.e., shred cheese, cook and crumble bacon, slice jalapeños, etc.)
  • Scramble eggs. Add butter to pan and cook eggs until scrambled. Remove from heat.
  • To assemble, start by spreading beans on the tortilla, then add some scrambled eggs. Add as many toppings as will fit or that you want. Enjoy!

The toppings are not included in the nutritional value as you may, or may not, use them.
