Slow Cooker Cheesy Ham Au Gratin tastes like an old fashioned recipe handed down from generation to generation, but no. It’s a super easy recipe using boxed scalloped potatoes that you make in your crock pot. Besides the cheesy sauce, there’s ham and sweet corn with bell peppers for added flavor and color.

I love the ease of this recipe. Basically, dump everything into the crock pot, give it a stir, then walk away.

Or, set it and forget it.

In eight hours you’ll have a delicious meal, or side dish, depending on how you want to serve it.

The sauce is cheesy from the cheddar cheese soup mixed with the seasoned sauce mix that comes in the box.

In fact, I just made this with my Spicy Honey Chicken Drumsticks, and wow, scrumptious.

Making Slow Cooker Cheesy Ham Au Gratin

If you use slow cooker liners, put one in now for easy cleanup. Otherwise, let’s just get started.

Add the milk, water, cheddar cheese soup, and the packet of dry sauce seasonings (that comes in the scalloped potatoes box) right into the crock pot.

Stir it until everything is combined, then add the potato slices.

Stir so that the sauce evenly coats both sides of each potato slice.

Then, add both cans of the Mexicorn (or whole corn with bell peppers in it).

Green Giant calls it Mexicorn, but other brands call it by other names.

Specifically, the HEB brand that I bought calls it Southwestern Corn, but it’s all the same.

Lastly, add the ham into the mix.

Stir so that everything is evenly coated and distributed, then cover the crock pot.

Set it on LOW heat for 8 hours, then go about your day.

Serving Slow Cooker Cheesy Ham Au Gratin

This dish is flexible in that you can serve it as a main meal, or as a side dish.

As a main meal, have a small side salad or some Buttered Parmesan Broccoli.

Alternatively, serve it as a side dish with your protein, like I did with the chicken.

Lastly, a sprinkle of chopped parsley looks beautiful on top.

Ingredients

  • 2 cups milk
  • 1 cup boiling water
  • 10.5 oz. can condensed cheddar cheese soup
  • 7.1 oz. box Betty Crocker Scalloped Potatoes in creamy sauce
  • 2 - 11 oz. cans Mexicorn (or whole corn with bell peppers)
  • 2 cups cooked ham, cubed

Instructions

  • In your crock pot, add milk, water, cheddar cheese soup, and packet of sauce mix from box of scalloped potatoes. Stir until combined. Add the potato slices and stir to insure potato slices are covered evenly in sauce.
  • Add both cans of corn and the ham. Stir.
  • Cover and cook on LOW heat for 8 hours. Enjoy!

    1. Hi Marie. I’ve never doubled it, but I don’t see why you can’t. I wouldn’t double the time, though. It should cook the same, especially if you keep the lid on. You probably know this, but you have to add a 1/2 hour to your cook time every time the lid is opened. So, keep the lid on and check the potatoes for tenderness after 8 hours on LOW, then add more time if necessary. Please let me know how it turns out.
