Apple Spice Muffins Recipe
When you’re in the mood for great muffins, there’s nothing better than some moist Apple Spice Muffins fresh from the oven with melted butter. Makes my mouth water thinking about it. The delicate aroma of freshly baked muffins is enough to make me want to stop typing and go bake something, but I really want to share this recipe with you first.
Made from scratch, these muffins are deliciously moist from the apple sauce and mayo (or sour cream) that goes into them. Further, the muffin is dense from the brown sugar giving it a hearty texture giving you something to sink your teeth into.
Flavored with Apple Pie Spice and topped with a sprinkle of cinnamon and sugar, these muffins are a perfect breakfast muffin or snack throughout your day.
This recipe makes 12 muffins, so if you want more, just double the batch. You can always freeze some for later, right? So line your muffin tin with 12 cupcake liners and turn your oven on to 350°.
Start by mixing your sugars together in a large bowl, adding in your oil and egg until it’s a rich dark brown. Meanwhile, mix your dry ingredients together in a small bowl: flour, baking powder, apple pie spice, and salt, and set aside.
Ok, back to the large bowl, let’s add the rest of the wet ingredients. I’ve used both sweetened and unsweetened applesauce and thought both were good.
For the mayo I’ve used “light,” or you can substitute with sour cream. I used Vanilla Almond Milk in this recipe, and lastly, vanilla extract.
Once that’s good and blended, add in your dry ingredients until everything is thoroughly mixed together.
Pour the batter evenly into your 12 cupcake liners and bake for about 18 minutes, depending on your oven.
What about the cinnamon and sugar sprinkles?
Half the time I can’t remember to sprinkle on the cinnamon/sugar topping before I bake the muffins. That’s ok, though, half the time I add it when they come out. Ha!
You can buy cinnamon and sugar together in the spice section of most grocery stores, which is so convenient when you bake a lot. You can, however, also make your own. Take equal amounts of cinnamon and sugar and mix them together, probably 1/4 tsp. each for these 12 muffins.
I hope you’ll indulge and have one of these Apple Spice Muffins fresh and warm from the oven. I highly recommend slathering it with butter, but no pressure. They really are good on their own, but melted butter usually takes it over the top.
Speaking of butter, I actually made some Apple Spice Butter to go along with these muffins. I figured I had the apple pie spice already out, so why not?
Apple Spice Muffins
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 1/3 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 2 tsp. apple pie spice
- 1/2 tsp. salt
- 1 cup applesauce (sweetened or unsweetened)
- 1/4 cup mayonnaise (regular, light or sour cream)
- 2 Tbsp. milk
- 1 1/2 tsp. vanilla
- 1/2 tsp. cinnamon and sugar (for topping)
- Line a muffin tin with 12 cupcake liners. Preheat oven to 350°.
- In a large bowl mix together sugars, oil, and egg.
- Meanwhile, mix in small bowl flour, baking powder, apple pie spice, and salt. Set aside.
- Back to the large bowl, add applesauce, mayo, milk, and vanilla. Add in dry ingredients and stir until thoroughly mixed.
- Divide evenly into 12 liners and bake for 18 - 20 minutes. Cinnamon and sugar topping can be sprinkled on before or after baking. Enjoy!
