Apple Pecan Snack Cake

A delicious apple cake flavored with pecans, brown sugar, and butter.

Materials

Streusel:

  • 1/3 cup chopped pecans
  • 1/3 cup all-purpose flour
  • 2 Tbsp. light brown sugar, packed
  • 2 Tbsp. butter, melted
  • 1/4 tsp. apple pie spice

Cake:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 tsp. ground ginger
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2/3 cup vegetable oil
  • 1/3 cup buttermilk*
  • 2 eggs
  • 1 1/2 cups apples, diced

Instructions

Streusel:

  • Mix all streusel ingredients together and set aside.

Cake:

  • Preheat oven to 350°. Grease or spray bottom of 8 x 8" or 9 x 9" baking dish.
  • In large bowl, stir dry ingredients (flour, sugar, brown sugar, soda, ginger, and salt) together.
  • In small bowl, stir together oil, buttermilk, and eggs. Add wet ingredients to large bowl. Stir until blended.
  • Fold in apples. Pour batter into baking dish and sprinkle streusel evenly over top.
  • Bake for approx. 50 min. or until deep golden brown and set on top. Cool 15 minutes. Enjoy!

Notes

*If you don't have buttermilk, you can substitute 1/3 cup milk plus 1 teaspoon lemon juice.
Serve warm or cool. Great with your favorite ice cream or a dollop of whipped cream.
