Apple Pecan Snack Cake

Streusel:
- 1/3 cup chopped pecans
- 1/3 cup all-purpose flour
- 2 Tbsp. light brown sugar, packed
- 2 Tbsp. butter, melted
- 1/4 tsp. apple pie spice
Cake:
- 1 3/4 cups all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 tsp. ground ginger
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2/3 cup vegetable oil
- 1/3 cup buttermilk*
- 2 eggs
- 1 1/2 cups apples, diced
Cake:
Preheat oven to 350°. Grease or spray bottom of 8 x 8" or 9 x 9" baking dish.
In large bowl, stir dry ingredients (flour, sugar, brown sugar, soda, ginger, and salt) together.
In small bowl, stir together oil, buttermilk, and eggs. Add wet ingredients to large bowl. Stir until blended.
Fold in apples. Pour batter into baking dish and sprinkle streusel evenly over top.
Bake for approx. 50 min. or until deep golden brown and set on top. Cool 15 minutes. Enjoy!
*If you don't have buttermilk, you can substitute 1/3 cup milk plus 1 teaspoon lemon juice.
Serve warm or cool. Great with your favorite ice cream or a dollop of whipped cream.
