Good Morning Casserole

A healthy breakfast meal made with eggs, spinach, turkey sausage, potatoes, and peppers.

Materials

  • 13 oz. Hillshire Farm Turkey Smoked Sausage, sliced into coins, then halved
  • 1/2 cup onion, chopped
  • 6 large eggs
  • 2 cups fresh spinach, chopped
  • 1 1/2 cups fresh potato, shredded (1 large)
  • 1 cup almond milk
  • 1/2 cup green bell pepper, chopped
  • salt and pepper to taste
  • fresh chopped parsley for garnish

Instructions

  • Preheat oven to 375°. Spray bottom and sides of 8 x 8" dish.
  • Saute sausage and onion until onion is opaque and sausage starts to brown.
  • Meanwhile, mix in large bowl: eggs, spinach, potato, milk, and bell pepper. Add salt (or No Salt) and pepper to taste. Once sausage and onion are done cooking, stir them into the egg mixture. Pour into prepared baking dish.
  • Bake 50 - 60 minutes, or until eggs are set and thoroughly cooked. Center should not jiggle. Enjoy!
