Good Morning Casserole

- 13 oz. Hillshire Farm Turkey Smoked Sausage, sliced into coins, then halved
- 1/2 cup onion, chopped
- 6 large eggs
- 2 cups fresh spinach, chopped
- 1 1/2 cups fresh potato, shredded (1 large)
- 1 cup almond milk
- 1/2 cup green bell pepper, chopped
- salt and pepper to taste
- fresh chopped parsley for garnish
Preheat oven to 375°. Spray bottom and sides of 8 x 8" dish.
Saute sausage and onion until onion is opaque and sausage starts to brown.
Meanwhile, mix in large bowl: eggs, spinach, potato, milk, and bell pepper. Add salt (or No Salt) and pepper to taste. Once sausage and onion are done cooking, stir them into the egg mixture. Pour into prepared baking dish.
Bake 50 - 60 minutes, or until eggs are set and thoroughly cooked. Center should not jiggle. Enjoy!
