Meatballs and Gravy

Meatballs using ground meat (turkey, beef, or chicken) with a delicious gravy of creamed soup and onion soup mix.

Materials

Meatballs:

  • 2 lbs. ground meat, (turkey, beef, or chicken)
  • 1/2 cup cracker crumbs
  • 1/2 cup celery, chopped
  • 1/4 cup onion, chopped
  • 1 large egg
  • salt and pepper

Gravy:

  • 2 10.5 oz. cans Cream of Celery soup
  • 1 10.75 oz. can Cream of Chicken soup
  • 1 packet onion soup mix
  • 1 1/2 cups chicken broth, or water

Instructions

  • Preheat oven to 350°.

Meatballs:

  • In a medium bowl, mix together the ground meat, crumbs, celery, onion, egg, salt and pepper to taste. Roll into balls (approx. 2") and place directly into 13 x 9" baking dish.

Gravy:

  • Meanwhile, in a medium pot, mix together the cans of soup, packet of onion soup mix, and the broth. Heat on stove top just until it starts to soft boil and remove from heat.
  • Pour gravy over meatballs and cover with foil.
  • Bake for 45 minutes. Remove foil and bake uncovered for another 30 minutes to brown tops of meatballs.
  • Serve immediately over pasta, mashed potatoes, or rice. Enjoy!
  • Refrigerate any leftovers.

Notes

To make ahead, follow steps through "pouring gravy over meatballs and covering with foil," then refrigerate. Bake for 55 minutes covered, then 30 minutes uncovered.
