Easy Chicken Bruschetta Casserole

Rotisserie chicken, diced tomatoes, stuffing, and cheese come together in this bruschetta-like casserole.

Materials

  • 14.5 oz. can diced tomatoes, fire roasted, undrained
  • 6 oz. pkg. stuffing mix for chicken
  • 2/3 cup water
  • 3 garlic cloves, minced
  • 1 tsp. Italian seasoning
  • 4 cups rotisserie chicken, shredded or cut into bite-sized chunks
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 350°.
  • In medium bowl, mix tomatoes, stuffing mix, water, garlic, and Italian seasoning.
  • Lightly spray a 9 x 11" (or 3-quart) baking dish. Layer chicken, then cheese. Top with stuffing mixture.
  • Bake uncovered for 30 minutes. Enjoy!

Notes

If using raw chicken, follow all the same directions above only preheat oven to 400°. Bake for 30 minutes or until chicken is thoroughly cooked.
