Materials

  • 1 lb. bacon (NOT thick cut)
  • 1 lb. Lil Smokies (smoked cocktail sausages)
  • 1/2 cup brown sugar (light or dark)
  • OPTIONAL: cayenne pepper, garlic powder, cumin, or other favored spice.
  • OPTIONAL: BBQ sauce for dipping.

Instructions

  • Spray the bottom of a 13 x 9" baking dish.
  • Cut the bacon into thirds. Pat the smokies with a paper towel to remove excess moisture. If adding optional spice, mix into brown sugar now.
  • Tightly wrap each smokie with a piece of bacon, then roll in brown sugar. Pierce the center with a toothpick, then place seam-side up in baking dish.
  • Cover tightly with foil to marinate in refrigerator for at least 1 hour, (or as long as overnight).
  • Preheat oven to 375°. Bake uncovered for 25 minutes.
  • Then increase temperature to 400° and bake for another 10 minutes. Check bacon for crispiness. Enjoy!

Keep a close watch on the bacon as the suggested cooking time approaches: bacon thickness and oven temperatures vary.
