Baked Sweet Potato Fries

Sweet potato pieces with crispy outsides, tender insides, and seasoned to perfection.

Materials

  • 4 medium sweet potatoes, peeled and cut into 3/4" thick rounds
  • 2 Tbsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried thyme

Instructions

  • Do NOT preheat oven.
  • Use a silver cookie sheet (not a dark cooking sheet) and line with foil. Spray foil with non-stick spray.
  • Peel and cut potatoes into 3/4" thick rounds. (Half or quarter rounds if smaller pieces desired.)
  • Place potatoes in bowl with olive oil and stir to evenly coat. Add spices, (salt, pepper, garlic, and thyme), and stir again to evenly coat.
  • Place potatoes on foil in a single layer. Cover with a second piece of foil.
  • Place in the oven and turn oven on to 425°. Bake for 30 minutes.
  • Remove from oven. Remove and discard cover. Carefully flip fries over and bake uncovered for 25 minutes.
  • Remove from oven and check for doneness by flipping a few pieces over. If both sides are crispy enough, they're done. If not, flip the rest over and bake for another 10 - 15 minutes. Enjoy!

Notes

Substitute the thyme with other spices, such as paprika, chili powder, or sage.
