Materials

  • 2 bananas, smashed
  • 2 large eggs, (or 1 egg and 2 egg whites)
  • 1 tsp. vanilla extract
  • 6 oz. non-dairy yogurt (or 6 oz. almond milk)
  • 3/4 cup almond milk
  • 2 cups oats
  • 2 Tbsp. Allulose
  • 2 scoops protein powder
  • 2 scoops collagen protein powder
  • 1 tsp. cinnamon
  • 1/2 tsp. sea salt

Instructions

  • Preheat oven to 350° and grease 9 x 9" baking dish.
  • In large bowl, mix all wet ingredients: bananas, eggs, vanilla, yogurt, and milk. Mix thoroughly.
  • In second bowl, mix all dry ingredients: oats, Allulose, protein powders, cinnamon, and salt.
  • Add dry ingredients to wet ingredients and stir.
  • Pour into prepared baking dish. Bake for 25 - 28 minutes. Enjoy!

Notes

OPTIONAL: add 3/4 cup fresh berries or 3/4 cup chopped walnuts. If the berries are juicy, blot them with a paper towel before mixing in to avoid adding too much liquid.
