Blueberry Protein Pancakes

An easy recipe of fresh blueberries, banana, and cinnamon, plus powdered protein in a pancake for a healthy meal or snack.

Materials

  • 1/2 banana
  • 1 egg
  • 2 scoops protein powder (see Notes)
  • 1/4 tsp. baking soda
  • 1 dash cinnamon
  • 2 tsp. water (+/-)
  • 1/4 cup fresh blueberries
  • cooking spray

Instructions

  • Using a 2-cup measuring cup (or small bowl) mash banana. Stir in egg, protein powder, baking soda, and a dash of cinnamon.
  • Add a little water (if necessary) for batter to pour better. Fold in blueberries.
  • Preheat pan to medium and spray pan with cooking spray. Pour batter into 3 pancakes. Lift edges to check for brown color before flipping.
  • Cook until brown on both sides. Enjoy!

Notes

Protein Powder: I use 1 scoop Orgain Organic Protein Powder from Costco (vanilla) and 1 scoop Collagen Protein. I'm sure chocolate would be good, too.
Serving suggestions: as a meal or snack, with or without almond butter and sugar-free syrup. Goes great with turkey sausage.
