Boss Blondies

These chewy, delicious dessert bars are made in a 13 x 9" baking dish. Cut them into cookie squares, bites, or bars. Additionally, this boss recipe includes the option of adding nuts, baking chips, or M&Ms.

Materials

  • 2 1/4 cups all-purpose flour
  • 2 tsp. cornstarch
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 cup unsalted butter, softened
  • 1 1/4 cups brown sugar (light or dark)
  • 1/2 cup granulated sugar
  • 2 large eggs + 1 egg yolk, room temperature
  • 2 tsp. vanilla extract
  • OPTIONAL: 3/4 cup white chips or M&Ms, and/or 1 cup chopped walnuts

Instructions

  • Preheat oven to 350° and line a 13 x 9" baking dish with parchment paper.
  • In medium bowl, sift together dry ingredients: flour, cornstarch, salt, and baking powder. Set aside.
  • In large bowl, beat butter with sugars until smooth, 2 - 3 minutes. Add eggs, egg yolk, and vanilla until fully combined.
  • Reduce beater speed to low and mix in dry ingredients just until combined. Do not over mix. Add nuts and/or baking chips if using.
  • Spread into even layer in prepared baking dish. Bake for 27 - 30 minutes, or until toothpick inserted in center comes out clean. Cool on wire rack. Remove blondies by pulling out parchment paper. Cut into bites, bars, or squares. Enjoy!

Notes

Suggestion: you can add optional additions in only half the batter, and keep the other half original. Or, add nuts to one half, M&Ms to the other half. You get the idea.
