Materials

  • 6 medium pork chops, about ¾-inch thick
  • 1/4 tsp. black pepper
  • 1/2 cup brown sugar
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Italian style panko bread crumbs
  • 3/4 cup mayonnaise, (I like chipotle flavored)
  • 1 Tbsp. Dijon mustard, (optional if using plain mayonnaise)

Instructions

  • Preheat your oven to 425°F. Generously grease a 9x13-inch baking dish.
  • Season both sides of the pork chops with the black pepper.
  • In a medium bowl, mix together the brown sugar, Parmesan cheese, and Italian-style panko breadcrumbs.
  • In a separate bowl, add the mayonnaise. If you're using plain mayonnaise, stir in the Dijon mustard for an extra boost of flavor.
  • Spread a thin layer of mayonnaise over both sides of each pork chop. Then dip each pork chop into the brown sugar mixture, pressing the coating firmly onto both sides. Use as much of the coating as you can—don't be shy!
  • Place the coated pork chops in the prepared baking dish and bake for 25–30 minutes, or until the thickest part of the pork reaches an internal temperature of 145°F. Let the pork chops rest for 5 minutes before serving. Enjoy!
