Materials

  • 2 large eggs
  • 1 1/4 cups all-purpose flour
  • 1 tsp. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/4 cups buttermilk
  • 1/2 tsp. baking soda
  • 2 Tbsp. shortening

Instructions

  • Using electric mixing stand, beat eggs.
  • In a separate bowl mix together flour, sugar, baking powder, and salt.
  • To eggs, add buttermilk and baking soda.
  • Add dry ingredients to egg mixture. Add shortening.
  • Mix only until well blended, do not over-mix.
  • Pour batter onto hot non-stick cooking surface or pan in approx. 5" circles. Do not disturb pancakes when cooking. Wait for many bubbles to appear, (1-2 minutes) then flip over, cook for approx. 1 minute more. Gently lift one side to see if golden brown.
  • Serve immediately. Enjoy!
