Buttermilk Pancakes Recipe

- 2 large eggs
- 1 1/4 cups all-purpose flour
- 1 tsp. sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 1/4 cups buttermilk
- 1/2 tsp. baking soda
- 2 Tbsp. shortening
Using electric mixing stand, beat eggs.
In a separate bowl mix together flour, sugar, baking powder, and salt.
To eggs, add buttermilk and baking soda.
Add dry ingredients to egg mixture. Add shortening.
Mix only until well blended, do not over-mix.
Pour batter onto hot non-stick cooking surface or pan in approx. 5" circles. Do not disturb pancakes when cooking. Wait for many bubbles to appear, (1-2 minutes) then flip over, cook for approx. 1 minute more. Gently lift one side to see if golden brown.
Serve immediately. Enjoy!
