Cauliflower Ham Hotdish

Cauliflower, ham, and rice casserole smothered in a cheesy sauce.

Materials

  • 2 Tbsp. butter
  • 1 small onion, chopped small
  • 2-10.5 oz. cans cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1/2 cup sour cream
  • 3 cups cauliflower florets
  • 4 cups ham, cubed
  • 4 cups cooked rice
  • 2 cups cheddar cheese, shredded
  • 1 cup Ritz Cracker crumbs
  • 2 Tbsp. butter, melted

Instructions

  • In a large pot, saute onions in butter.
  • Meanwhile, in separate bowl, mix together soup, broth, and sour cream.
  • Once onions are opaque, add soup mixture. Continue cooking on medium-low until soup begins to bubble. Add cauliflower and ham. Stir and continue cooking.
  • Preheat oven to 350°.
  • Add rice and cheese to pot. Stir.
  • Lightly grease (or spray) 13 x 9 baking dish. Once oven is ready, pour hotdish into baking dish and cover. Bake for 20 minutes.
  • While that's baking, mix together cracker crumbs with butter.
  • Remove hotdish from oven. Evenly spread crumb mixture over top and continue baking for last 10 minutes uncovered. Enjoy!
