Cauliflower Ham Hotdish
Cauliflower, ham, and rice casserole smothered in a cheesy sauce.

- 2 Tbsp. butter
- 1 small onion, chopped small
- 2-10.5 oz. cans cream of chicken soup
- 1 cup low-sodium chicken broth
- 1/2 cup sour cream
- 3 cups cauliflower florets
- 4 cups ham, cubed
- 4 cups cooked rice
- 2 cups cheddar cheese, shredded
- 1 cup Ritz Cracker crumbs
- 2 Tbsp. butter, melted
In a large pot, saute onions in butter.
Meanwhile, in separate bowl, mix together soup, broth, and sour cream.
Once onions are opaque, add soup mixture. Continue cooking on medium-low until soup begins to bubble. Add cauliflower and ham. Stir and continue cooking.
Preheat oven to 350°.
Add rice and cheese to pot. Stir.
Lightly grease (or spray) 13 x 9 baking dish. Once oven is ready, pour hotdish into baking dish and cover. Bake for 20 minutes.
While that's baking, mix together cracker crumbs with butter.
Remove hotdish from oven. Evenly spread crumb mixture over top and continue baking for last 10 minutes uncovered. Enjoy!
