Christmas M&M Cookies
Delicious cookies flavored with your favorite M&Ms, then rolled in red and green sprinkles for the ultimate Christmas cookie. Recipe can be doubled.

- 1 1/2 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/3 cup granulated sugar
- 1 large egg
- 2 tsp. vanilla extract
- 1 1/2 cups M&Ms,* divided
- festive sprinkles
Preheat oven to 350° and grease, or line baking sheets with parchment paper.
In small bowl, whisk dry ingredients together: flour, baking powder, baking soda, and salt. Set aside.
In large bowl, beat butter with brown and granulated sugars until light and fluffy. Stir in egg and vanilla. Scrape sides as you go.
Add the flour mixture just until combined.
Stir in approx. 1 cup M&Ms.
Either 1) bake cookies now, or 2) refrigerate for an hour (or overnight) for slightly thicker cookies.
Roll cookies into similar sizes (approx. 1 1/2") then press 2 - 3 M&Ms on top of each cookie before rolling in sprinkles. Space cookies out about 2" allowing them room to spread.
Bake for 8 - 10 minutes, or until edges appear set and the center looks slightly undone. Cool on wire rack. Enjoy!

Peanut M&Ms may be too large for these cookies; regular M&Ms work best.
For Valentine's Day, use red and white M&Ms with heart sprinkles. Color coordinate the M&Ms and sprinkles with any holiday; green = St. Patrick's Day, red, white and blue = 4th of July, etc.
