- 3 pcs. boneless/skinless chicken breast, cubed
- 1 tsp. salt
- 1 tsp. Italian seasoning
- 1/2 tsp. garlic powder
- 1/4 tsp. black pepper
- 1/2 cup sour cream, or Greek yogurt
- 1/2 cup mayonnaise
- 2 garlic cloves, minced
- 3/4 cup parmesan cheese, grated
- 1 Tbsp. olive oil
- 4 cups baby spinach
- 2 cups mushrooms, sliced
Preheat oven to 400°F, and lightly grease 13x9" baking dish.
Season chicken with salt, Italian seasoning, garlic powder, and pepper. Set aside.
In large bowl, mix together sour cream, mayonnaise, garlic, parmesan, and olive oil until combined. Add chicken, stir to evenly coat. Stir in spinach and mushrooms. Pour into prepared dish and spread out evenly.
Bake uncovered for 30 minutes. Enjoy!
