Materials

  • 24 oz. jar marinara sauce
  • 3 boneless/skinless chicken breasts, cut into evenly-sized chunks
  • 1 tsp. salt, divided
  • 1/2 tsp. black pepper
  • 16 oz. ricotta cheese
  • 8 oz. frozen chopped spinach, thawed and squeezed dry
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1 Tbsp. Italian seasoning
  • 1 tsp. garlic powder
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 375°F.
  • Spread half of the marinara sauce in the bottom of a 13x9-inch baking dish. Arrange chicken over the sauce. Season the chicken with 1/2 tsp. salt and black pepper.
  • In medium bowl, combine ricotta, spinach (well-drained), egg, Parmesan, Italian seasoning, garlic powder, and remaining 1/2 tsp. salt. Spoon the ricotta mixture over the chicken. Use back of spoon to gently press down and spread. Top with the remaining marinara sauce. Cover with foil.
  • Bake for 30 minutes, or until the chicken reaches 165°F internally. Remove foil, add mozzarella, and bake uncovered for an additional 10 minutes until melted and bubbly. Rest briefly before serving. Garnish with fresh herbs if desired. Enjoy!
