- 24 oz. jar marinara sauce
- 3 boneless/skinless chicken breasts, cut into evenly-sized chunks
- 1 tsp. salt, divided
- 1/2 tsp. black pepper
- 16 oz. ricotta cheese
- 8 oz. frozen chopped spinach, thawed and squeezed dry
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 1 Tbsp. Italian seasoning
- 1 tsp. garlic powder
- 1 cup shredded mozzarella cheese
Preheat oven to 375°F.
Spread half of the marinara sauce in the bottom of a 13x9-inch baking dish. Arrange chicken over the sauce. Season the chicken with 1/2 tsp. salt and black pepper.
In medium bowl, combine ricotta, spinach (well-drained), egg, Parmesan, Italian seasoning, garlic powder, and remaining 1/2 tsp. salt. Spoon the ricotta mixture over the chicken. Use back of spoon to gently press down and spread. Top with the remaining marinara sauce. Cover with foil.
Bake for 30 minutes, or until the chicken reaches 165°F internally. Remove foil, add mozzarella, and bake uncovered for an additional 10 minutes until melted and bubbly. Rest briefly before serving. Garnish with fresh herbs if desired. Enjoy!
