Easy Beef Enchilada Bake is a beginner-friendly Tex-Mex dinner made with seasoned ground beef, Rotel, tortillas, and lots of melted Colby Jack cheese. Choose between classic red enchilada sauce or a creamy version for a comforting casserole-style meal.

Materials

  • 1 lb. ground beef
  • 1/2 onion, chopped
  • 1 oz. pkt. taco seasoning
  • 10 oz. can Rotel with green chilies
  • 8 tortillas, 8-inches
  • 4 cups Colby Jack cheese, shredded (or cheddar or Pepper Jack)
  • 10 oz. can cream of celery soup (or mushroom, chicken, etc.) plus half can water
  • --OR-- 15 oz. can red enchilada sauce

Instructions

  • Preheat oven to 400°F and lightly grease a 9x13" baking dish.
  • In a skillet over medium heat, brown the ground beef, chopped onion, and taco seasoning. Break the meat into small pieces as it cooks. Once the beef is fully cooked, drain excess grease. Stir in the Rotel with Green Chilies and cook, stirring often, until the mixture thickens slightly. Remove from heat.
  • Divide the beef mixture evenly among the 8 tortillas. Sprinkle 2 cups of the shredded Colby Jack cheese evenly over the meat. Fold the sides of each tortilla inward, bring the bottom up and tuck it under the filling, then roll away from you to form a burrito. Place seam-side down in the prepared baking dish.
  • Pour your chosen sauce evenly over the enchiladas. Red enchilada sauce can be poured directly over the enchiladas. If using the cream soup, mix in a small bowl with the water first, then pour over the top.
  • Sprinkle the remaining 2 cups of shredded cheese over the top. Bake for 30–35 minutes, until hot and bubbly. Enjoy!
