Materials

Bread:

  • 6 oz. container vanilla yogurt
  • 3 large eggs, lightly beaten
  • 1 cup light brown sugar
  • 1/2 cup vegetable oil
  • 1 Tbsp. grapefruit zest
  • 1/4 cup grapefruit juice
  • 1 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt

Glaze:

  • 1 cup confectioners sugar
  • 2 Tbsp. grapefruit juice
  • 1/4 tsp. vanilla extract

Instructions

Bread:

  • Preheat oven to 350°. Grease or spray 9 x 5" loaf pan.
  • In a large bowl, mix together yogurt, eggs, brown sugar, oil, grapefruit zest grapefruit juice, and vanilla.
  • In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  • Add the dry ingredients to the wet ingredients. Mix just until combined. Do not over mix.
  • Pour batter into prepared pan and bake until a toothpick inserted in the center comes out clean. Timing can range from 35 - 45 minutes.
  • Allow to cool in pan for 10 minutes, then remove to wire rack to cool completely.

Glaze:

  • In a small bowl, whisk together powdered sugar, grapefruit juice, and vanilla until smooth and lump free. Drizzle over top of dessert bread. Enjoy!

Notes

Serve with thin slices/wedges of grapefruit.
