Materials

  • 2 Tbsp. olive oil
  • 2 skinless/boneless chicken breasts, cut in half horizontally
  • 1 Tbsp. dried oregano
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 cup crumbled feta cheese
  • 1 cup cherry or grape tomatoes, whole or halved
  • 1/2 cup Kalamata olives, pitted and halved

Instructions

  • Preheat oven to 375°F.
  • Drizzle olive oil into 12x8" baking dish.
  • Slice chicken breasts in half horizontally to create thinner pieces. Add chicken to the dish and flip to coat in the oil.
  • Season evenly with salt, pepper, and oregano. Sprinkle feta, olives, and tomatoes over the top.
  • Bake uncovered for 35–40 minutes, or until chicken reaches 165°F internally. Let rest for 5–10 minutes before serving. Enjoy!
