Materials

  • 1 cup ripe bananas, mashed (about 2 bananas)
  • 3/4 cup brown sugar
  • 1/3 cup unsweetened applesauce
  • 1 large egg, lightly beaten
  • 1 tsp. vanilla extract
  • 1 cup whole-wheat flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. apple pie spice
  • 1/4 tsp. baking soda
  • 1 cup quick-cooking oats
  • 1 cup fresh apple, diced

Instructions

  • Preheat oven to 350°F. Lightly grease a muffin pan or use 12 cupcake liners.
  • In large bowl, mix together banana, brown sugar, applesauce, egg, and vanilla.
  • In separate bowl, mix together dry ingredients: flour, baking powder, salt, apple pie spice, and baking soda.
  • Stir flour mixture gently into banana mixture, mixing only until the dry ingredients are just incorporated. (Overmixing can make the muffins tough.) Fold in oats and diced apples.
  • Divide batter evenly into prepared muffin cups and bake for 18 - 20 minutes, or until a toothpick inserted into the center comes out clean or with tiny crumbs. Let muffins cool in pan for a few minutes, then remove to cool completely on wire rack. Enjoy!
