Mini Mashed Tator Tots
A delicious little bite of cheesy mashed potatoes, perfectly seasoned, and perfectly baked in a mini muffin pan. They're similar to tator tots only better, tastier like only homemade can be.

- 1/2 cup Parmesan cheese, grated (for rolling)
- 3 cups mashed potatoes,* chilled
- 1 large egg
- 1 cup cheddar cheese, shredded
- 1/4 cup onion, minced
- 1/4 cup all-purpose flour
- 1/4 tsp. garlic powder
- salt and black pepper to taste
Preheat oven to 400° and butter or grease a mini muffin pan.
Add Parmesan cheese to small bowl, and set aside.
In a large bowl, mix together all remaining ingredients (mashed potatoes, egg, cheddar cheese, onion, flour, garlic powder, salt, and pepper).
Roll mixture into small balls (approx. 1 1/4"), then roll in Parmesan cheese.
Drop each ball into a mini muffin space. Bake for 15 - 20 minutes, or until golden brown and crispy on outside.
Let cool in pan for a few minutes before removing. Enjoy!
*The mashed potatoes can be plain, or mixed with milk and butter, such as leftovers would be.
