Peanut Butter Chocolate Bars
A delicious center of peanut butter, oats, and cinnamon is dipped into melted chocolate.

- 2 cups old fashioned oats
- 1 tsp. ground cinnamon
- 1/2 tsp. kosher salt
- 1 cup peanut butter
- 3/4 cup maple syrup
- 1 tsp. vanilla extract
- 1 1/2 cups chocolate chips (semi-sweet, milk, or dark)
Line an 8 x 8" baking dish with parchment paper. Add oats to food processor and blend until fine.
In medium bowl, add oats, cinnamon, and salt.
In microwavable bowl, heat peanut butter and maple syrup until melted. Do not overheat. (Start with 30 seconds, then check every 15 seconds until peanut butter is melted.) Stir until combined. Stir in vanilla.
Pour peanut butter mixture into oat mixture. Stir until well combined. Press mixture evenly into baking dish. Cover and refrigerate min. of 30 minutes.
Cut cold peanut butter mixture into bars or shapes of your choosing. Have a tray ready lined with parchment or waxed paper. Melt chocolate chips according to package directions, then dip each bar into the chocolate. (See blog for tips.)
Place back in refrigerator to set chocolate. Enjoy!
