Peanut Butter Pumpkin Treats

Materials

  • 2 large eggs, lightly beaten
  • 1/2 cup pure pumpkin
  • 1/4 cup creamy peanut butter
  • 2 1/2 cups whole-wheat flour

Instructions

  • Preheat oven to 350°. Prepare 2 cookie sheets with non-stick spray or parchment paper.
  • In large bowl, mix eggs, pumpkin, and peanut butter.
  • Gradually add flour and work into dough. Knead dough adding flour until fully combined. Add tiny bit of water only if necessary.
  • Shape treats into desired size using cookie cutters, melon baller, or just pinch off size wanted.
  • Bake smaller pieces for 20 minutes, 5 minutes longer if you want them crunchy.
  • For larger pieces, bake 30 minutes, and an extra 5 minutes to make them crunchier.
  • Store in sealed container in the refrigerator. Enjoy!
