Equipment

Materials

  • 16 oz. Caesar dressing
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped
  • 2 tsp. lemon zest
  • 1 tsp. crushed red pepper flakes
  • 2 lbs. skinless, boneless chicken breasts (3-4 breasts)
  • 1 Tbsp. Italian seasoning
  • 1 tsp. each: salt, black pepper, garlic powder
  • 8 oz. cream cheese, softened and cubed (to melt faster)
  • 6 oz. fresh baby spinach

Instructions

  • In slow cooker, mix Caesar dressing, Parmesan cheese, parsley, lemon zest, and crushed red pepper flakes.
  • Season both sides of chicken breasts with Italian seasoning, salt, pepper, and garlic powder. Lay chicken in slow cooker, flip to evenly coat.
  • Cover. Cook on LOW for 6 hours. Thirty minutes before serving, shred chicken with 2 forks, add cream cheese, and spinach. Stir occasionally. Serve when cheese is melted and spinach is wilted. Enjoy!

Notes

Serve over pasta, rice, or mashed potatoes. For a complete Caesar Salad experience, serve over Romain lettuce.
If you want to stir cooked pasta into the sauce, I recommend adding at least 1/2 cup chicken broth to Caesar dressing mix in the begging of the cook. This will give you more sauce to coat the pasta with.
