- 16 oz. Caesar dressing
- 1/2 cup Parmesan cheese, grated
- 1/4 cup fresh parsley, chopped
- 2 tsp. lemon zest
- 1 tsp. crushed red pepper flakes
- 2 lbs. skinless, boneless chicken breasts (3-4 breasts)
- 1 Tbsp. Italian seasoning
- 1 tsp. each: salt, black pepper, garlic powder
- 8 oz. cream cheese, softened and cubed (to melt faster)
- 6 oz. fresh baby spinach
In slow cooker, mix Caesar dressing, Parmesan cheese, parsley, lemon zest, and crushed red pepper flakes.
Season both sides of chicken breasts with Italian seasoning, salt, pepper, and garlic powder. Lay chicken in slow cooker, flip to evenly coat.
Cover. Cook on LOW for 6 hours. Thirty minutes before serving, shred chicken with 2 forks, add cream cheese, and spinach. Stir occasionally. Serve when cheese is melted and spinach is wilted. Enjoy!
Serve over pasta, rice, or mashed potatoes. For a complete Caesar Salad experience, serve over Romain lettuce.
If you want to stir cooked pasta into the sauce, I recommend adding at least 1/2 cup chicken broth to Caesar dressing mix in the begging of the cook. This will give you more sauce to coat the pasta with.
