- 6 Tbsp. unsalted butter, melted
- 4 skinless, boneless chicken breasts
- 1/2 cup chicken broth
- 4 1/2 Tbsp. cornstarch
- 1/2 cup half and half
- 1/2 cup fresh lemon juice (from approx. 3 lemons)
- 1 1/2 tsp. garlic cloves, minced
- 1 tsp. salt
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1/4 tsp. black pepper
- 1/8 tsp. paprika
Melt the butter, then set aside to cool. Place chicken breasts into slow cooker.
In bowl, whisk together chicken broth and cornstarch until smooth. Stir in half and half, lemon juice, garlic, salt, thyme, oregano, pepper, and paprika. Add melted butter. Pour over chicken. Place cover on slow cooker.
Cook on LOW (preferred method) for 6-7 hours, or on HIGH for 3-4 hours.
Leave chicken whole, shred it, or somewhere in between. Serve over mashed potatoes, rice, or pasta. Enjoy!
