Soft Date Nut Cookies

A soft and chewy cookie flavored with brown sugar, dates, and nuts. Not too sweet with the option to add a glaze to sweeten the deal.

Materials

Cookies:

  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 3 large eggs
  • 3 Tbsp. hot water
  • 1 tsp. vanilla extract
  • 1 cup nuts, chopped (pecans, walnuts, etc.)
  • 1 cup dates, chopped

Glaze: (optional)

  • 1 cup powdered sugar
  • 2 Tbsp. milk or cream

Instructions

  • Preheat oven to 350°.
  • In medium bowl, sift together the flour and baking soda. Set aside.
  • In large bowl, beat the butter and sugars until well combined. Add the eggs, hot water, and vanilla. Reduce the speed to low, then add the flour mixture. Mix just until combined. Stir in nuts and dates.
  • Drop 1 1/4" cookies onto ungreased cookie sheet with room for cookies to spread. Bake for 10 - 12 minutes, or until a light golden brown. Let cool completely on wire rack.
  • For optional glaze, mix powdered sugar with 1 - 2 tablespoons of milk or cream. Add milk until you have desired consistency. Pour glaze into bag, snip the tip, and drizzle over cookies. Alternatively, dip half the cookie into the glaze. Enjoy!
