St. Patrick's Day Cupcakes

Materials

Cupcakes:

  • 1 3/4 cups all-purpose flour
  • 3.4 oz. box instant pistachio pudding mix
  • 2/3 cup granulated sugar
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 large eggs, room temperature
  • 1 1/2 cups whole milk, room temperature
  • 1/2 cup vegetable oil
  • 1 tsp. vanilla extract
  • 3/4 cup miniature chocolate chips
  • OPTIONAL: additional green food coloring for a darker green color

Cream Cheese Frosting:

  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 4 cups powdered sugar

Sprinkles:

  • sprinkle on green sanding sugar, Jimmies, or candy shamrock sprinkles for a festive look.

Instructions

  • Preheat oven to 375° and line 2 muffin pans with 20 cupcake liners.

Cupcakes:

  • Mix dry ingredients together in medium bowl: flour, dry pudding mix, sugar, baking powder, and salt. Set aside.
  • In large bowl, mix together wet ingredients: eggs, milk, oil, and vanilla until combined. With beaters on low, add the flour mixture. Beat until thoroughly mixed, do not over mix. Fold in chocolate chips.
  • Divide batter evenly into liners (approx. 2/3 full). Bake cupcakes for 18 - 20 minutes, or until a toothpick inserted in the center comes out clean or with dry crumbs. If the toothpick is still wet, continue cooking for 2 minutes at a time, then re-check.
  • Let cupcakes cool in pans for 10 minutes, then remove them to cool completely on wire racks. Meanwhile, make the frosting.

Cream Cheese Frosting:

  • In large bowl, beat together the cream cheese, butter, vanilla, and salt until light and fluffy. With beaters on LOW, add half the powdered sugar, scraping sides as necessary. Once combined, add the remaining powdered sugar. Increase speed on beaters for 2 minutes. Spread or pipe onto cooled cupcakes. Sprinkle on green colored sanding sugar or St. Patrick's Day inspired sprinkles. Enjoy!
