Summer Fruit Cups

A simple cool dessert using fresh fruit, gelatin, and orange juice.

Materials

  • 1 cup orange juice
  • 6 oz. box peach gelatin
  • 2 cups cold water
  • 1 cup strawberries, quartered
  • 1 apple, peeled and sliced bite-sized
  • 1 cup cherries, pitted and halved
  • Optional: frozen whipped topping or whipped cream

Instructions

  • Bring orange juice to a boil (stove top or about 2+ minutes in microwave). Pour into medium bowl.
  • Add gelatin and whisk until dissolved (approx. 2 minutes). Stir in cold water.
  • Evenly divide fruit into 8 clear glasses. Pour gelatin over the fruit.
  • Refrigerate for at least 4 hours. Top with optional frozen whipped topping or whipped cream. Enjoy!

Notes

Fruit Substitutes: you'll need 3 cups total. Swap any of the recipe fruit for halved grapes, peeled and sliced peaches or nectarines, blueberries, blackberries, raspberries, pineapple, and all the rest. Mix and match your favorites. 
Also, you can substitute 2 - 3 oz. boxes of gelatin instead of 1 -  6 oz. box. This way you can use 2 different flavors, like strawberry/lime.
