Sweet Potato Mash

A delicious and savory side dish made with sweet potatoes and half-n-half.

Materials

  • 3 lbs. sweet potatoes, peeled and cut into 1 1/2" pieces
  • 1/2 cup half-n-half, (see Notes)
  • 1/2 cup melted butter
  • 1/2 tsp. each salt and black pepper to taste

Instructions

  • In a large pot with salted water bring sweet potato pieces to a boil. There should be enough water to cover the potatoes. Reduce heat to medium and cook until fork-tender, 10 - 15 minutes. Drain.
  • Return sweet potatoes to pot on low heat. Mash until smooth and creamy. Add half-and-half, melted butter, salt, and pepper. Enjoy!

Notes

The half-n-half can be substituted for whole milk, soy milk, any nut milk, or even buttermilk.
