In a large skillet, heat oil over medium heat. Add chicken, cook until no longer pink (about 6 min.). Remove chicken to a plate.
To skillet, add onion. Cook until softened and just starting to brown (about 5 min.). Return chicken to skillet.
Add the salt, pepper, garlic powder, and Italian Seasonings. Stir to coat. Add chicken broth and tomatoes. Bring to a boil and cook another 2-3 minutes or until slightly thickened.
