Materials

  • 1 Tbsp. olive oil
  • 1 lb. skinless, boneless chicken breast, cubed
  • 1 onion, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. Italian Seasoning
  • 1/2 cup chicken broth
  • 14.5 oz. can diced tomatoes, undrained
  • 1/2 cup plain yogurt
  • OPTIONAL: sprinkle fresh chopped parsley over top

Instructions

  • In a large skillet, heat oil over medium heat. Add chicken, cook until no longer pink (about 6 min.). Remove chicken to a plate.
  • To skillet, add onion. Cook until softened and just starting to brown (about 5 min.). Return chicken to skillet.
  • Add the salt, pepper, garlic powder, and Italian Seasonings. Stir to coat. Add chicken broth and tomatoes. Bring to a boil and cook another 2-3 minutes or until slightly thickened.
  • Remove from heat and stir in yogurt. Serve over mashed potatoes, rice, or egg noodles. Optional: sprinkle fresh chopped parsley over top. Enjoy!
