Tortilla Quiche Bake

A simple meal prepared in its own tortilla for easy clean-up. Eggs, cheese, tomatoes, and spinach are then seasoned and baked to perfection. Quick and easy.

Materials

  • 1 flour tortilla (such as Mission Carb Balance) 7-inch
  • 2 large eggs
  • 1/3 cup cottage cheese
  • salt and pepper to taste
  • 2 Tbsp. tomatoes, diced (or 2 small sweet tomatoes)
  • 1/4 cup baby spinach
  • 1/2 cup cheese, shredded (such as cheddar or mozzarella)

Instructions

  • Preheat oven to 350°.
  • Place a 7" tortilla in a 6" cake pan (or any 6" oven-safe dish with sides). Press the center down flat. Add the eggs and cottage cheese, stir together. Add salt and pepper to taste.
  • Layer on diced tomatoes, spinach, and cheese. Bake for 20 - 25 minutes. Enjoy!
