Watermelon Vodka Highballs

A refreshing watermelon, mint, and citrus drink poured over watermelon ice cubes. Sugar-free version and it's low calorie.

Materials

For the Drink:

  • 4 - 6 mint leaves, plus a sprig
  • ice cubes
  • 1 oz. Smirnoff Zero Sugar Watermelon & Mint vodka
  • 5 oz. Diet Sprite (or other lemon/lime diet soda)

For Watermelon Ice Cubes:

  • 1 1/2 cups watermelon, cubed

Instructions

For the Drink:

  • Holding the mint leaves in one hand, smack them with the other hand to release their flavor. Drop into highball glass with ice cubes (either water or watermelon ice cubes).
  • Add vodka, then soda. Stir.
  • Garnish glass with optional mint sprig, slice of watermelon, or lime wedge.

For Watermelon Ice Cubes:

  • Cube watermelon to desired shape/size. Set cubes on plate or tray. Cubes should not touch each other. Cover with clear wrap and freeze for about 2 hours. Use immediately or place in sealed container for up to 9 months. Enjoy!

Notes

NOTE: Frozen watermelon is best eaten partly thawed. Fully thawed watermelon that had been frozen is closer to puree in texture.
