Cupid’s Coin Cookies
Cupid’s Coin Cookies are just what Cupid ordered, so I felt it only fair to name them after him. The tasty treats are rolled in red sanding sugar making them pretty and festive for Valentine’s Day, or any day, really. In fact, change up the color of the sanding sugar to fit any theme, but don’t tell Cupid.

It’s fun to share these munchable cookies with friends and sweethearts on Valentine’s Day. Roll them in pink and red sanding sugar for a festive effect.
Similar to my Christmas Coin Cookies, these treats are also easy to make. Cupid’s Coin Cookies, however, have more of an almond flavor with the same buttery base.
It’s a small difference I think you’ll love.

Making Cupid’s Coin Cookies
Start by getting the dry ingredients mixed, then set aside for now.
Next, in a large bowl, beat the butter until light and fluffy. Then, add the sugar and beat for another two minutes to fully incorporate.
Stir in the egg yolks and almond extract until combined, then add the flour mixture.
Easy, right?

So, now you have your cookie dough. Separate the dough into four equal parts. Each part, then, needs to be rolled into a 6″ log.
Once you have four logs, spread out the sanding sugar on a plate, preferably a plate with sides to keep the sugar on the plate and not all over your kitchen.
I used Wilton’s sanding sugar, which you can find HERE.
Roll the log in the sugar until fully coated, then roll the log up in waxed paper or plastic wrap.
You can substitute sanding sugar for small sprinkles or finely chopped nuts, too.
Place the wrapped logs in the refrigerator for at least two hours, or overnight if that fits your timing better.

Baking Cookies
When you’re ready to bake your cookies, preheat the oven to 350°.
Take out one cookie log at a time and cut into 1/4″ coins. Place them 2″ apart on an ungreased cookie sheet and bake for 12 – 15 minutes.
They’re ready when the edges turn a slight golden brown.
Let the cookies cool on a wire rack, and that’s it. Dive in!

Cupid’s Coin Cookies
Ingredients
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large egg yolks
- 1 tsp. almond extract
- sanding sugar, small sprinkles, and/or finely chopped nuts for rolling edges in
Instructions
- In small bowl, whisk together the flour and salt. Set aside.
- In large bowl, beat butter until light and fluffy. beat in sugar for another 2 minutes. Add yolks and almond extract, stir until combined. Stir in flour mixture until dough comes together. Dough will be crumbly.
- Divide dough into 4 portions. Roll each portion into a 6" log. On a flat plate with edges, spread sanding sugar out. Roll log in sanding sugar until entire edge is coated. Wrap log in plastic wrap or waxed paper.
- Repeat for each log using either sanding sugar, very small sprinkles, or very finely chopped nuts. Refrigerate logs for at least 2 hours, or overnight.
- Preheat oven to 350°. Remove one log at a time from refrigerator and unwrap. Cut 1/4" thick coins and place on ungreased cookie sheet 2" apart so they have room to spread. Bake for 12 – 15 minutes, or until lightly golden around edges. Let cool completely on wire racks. Enjoy!
