- 1 large egg
- 1 cup almond butter
- 1/2 cup brown sugar
- 1 tsp. baking soda
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup OPTIONAL ADD-INS: dried cranberries, candied pecans, glazed walnuts
Preheat oven to 350° and line 2 cookie sheets with parchment paper.
In medium bowl, beat egg. Add almond butter, brown sugar, and baking soda until smooth. Fold in chocolate chips and any optional add-ins.
Roll 1 tablespoon of dough into ball, then flatten slightly on cookie sheet. Place each cookie approx. 1-inch apart.
Bake cookies 8 - 10 minutes. Allow cookies to cool 5 minutes on cookie sheet, then transfer to wire rack to cool completely. Enjoy!
