Apple Streusel Bars

- 1 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (light or dark)
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 tsp. vanilla extract
- 1/2 cup Granny Smith apple, chopped
- 1/2 cup pecans or walnuts, chopped
Streusel:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar (light or dark)
- 1/4 cup granulated sugar
- 3 Tbsp. salted butter, melted and cooled slightly
- 1 tsp. cinnamon
Preheat oven to 350° and grease a 9 x 9" baking dish.
In medium bowl, sift together flour, baking powder, cinnamon, and salt. Set aside.
In large bowl, beat both sugars and butter together until smooth, about 2 min. Stir in egg and vanilla.
Reduce beater to low and mix in flour mixture. Do not over mix. Fold in apples and chopped nuts. Spread mixture into prepared baking dish.
In separate bowl, mix together the streusel: flour, both sugars, butter, cinnamon, and salt. Evenly spread streusel over top by dropping small amounts over apple mixture.
Bake uncovered for 28 - 32 minutes, or until top is golden brown. Enjoy!
