Materials

  • 1 1/2 cups butter, melted
  • 1 1/2 cups granulated sugar
  • 3/4 cup light brown sugar
  • 1 Tbsp. vanilla extract
  • 3 cups all-purpose flour
  • 2 1/4 cups old-fashioned oats, (not quick oats, or instant)
  • 1/4 tsp. salt
  • 2 1/2 cups berry preserves, (any flavor preserves, really)

Instructions

  • Preheat oven to 350°F. Spray non-stick spray in a 9 x 9" baking dish.
  • In large bowl, mix together melted butter, both sugars, and vanilla.
  • Stir in flour, oats, and salt. Set aside a heaping cup of mixture for topping.
  • Press remaining oat mixture into baking dish.
  • Spread preserves evenly over crust. Top with reserved oat mixture.
  • Bake for 32 - 36 minutes. Sides should be set and center will be light golden brown. Allow to cool for 2 hours on a wire rack before cutting into, or serve warm with a scoop of ice cream. Enjoy!
