Berry Oatmeal Bars
Use your favorite flavor of berry preserves in these Berry Oatmeal Bars. They’re sweet, chewy, and thoroughly delicious. Use blueberry, raspberry, or blackberry, as shown, but don’t stop there. There’s no rule saying it has to be a berry; I won’t tell if you won’t tell. Use sweet orange marmalade, peach, mango pepper, or whatever preserves you love.
These chewy treats are great, mostly because you get to use your favorite flavor.
Choose a berry flavor, or customize it with apricot-pineapple preserves or hot pepper jelly.
Truthfully, I didn’t know you could buy so many flavors.
Actually, I Googled “preserve flavors,” and was surprised at all the options.
Making Berry Oatmeal Bars
Spray your 9 x 9″ baking dish with non-stick spray and preheat your oven to 350°F.
Crust and Topping
Melt the butter in a microwave safe dish.
Then, in a large bowl, mix together the melted butter with both the sugars and vanilla.
Next, add the oats, flour, and salt.
Stir this mixture together until well combined, then take out a heaping cup and set aside.
After that, put the rest of the oat mixture in the baking dish and press down so it’s even.
Berry Preserves
As stated earlier, you don’t have to use berry preserves, but it’s what’s used traditionally.
It’s also what you’ll usually find in stores, unless you order online.
I used blackberry in these pictures, which was scrumptious, although blueberry is probably my favorite.
As I mentioned earlier, if you look online, there are many flavors to choose from. Many! It’s crazy awesome.
Anyway, spread your preserves evenly over the crust, then sprinkle the reserved topping on top.
Sprinkle it evenly, or leave the larger chunks for more of homemade look.
Further, you can squeeze small amounts in your hand if you want the topping chunkier.
Time to Bake
Bake for 32 – 36 minutes. The edges start to set and the center will be a very light golden brown.
Place dish on a wire rack to cool for about 2 hours or so before cutting into, or serve warm with a scoop of ice cream. Yum!

Ingredients
- 1 1/2 cups butter, melted
- 1 1/2 cups granulated sugar
- 3/4 cup light brown sugar
- 1 Tbsp. vanilla extract
- 3 cups all-purpose flour
- 2 1/4 cups old-fashioned oats, (not quick oats, or instant)
- 1/4 tsp. salt
- 2 1/2 cups berry preserves, (any flavor preserves, really)
Instructions
- Preheat oven to 350°F. Spray non-stick spray in a 9 x 9" baking dish.
- In large bowl, mix together melted butter, both sugars, and vanilla.
- Stir in flour, oats, and salt. Set aside a heaping cup of mixture for topping.
- Press remaining oat mixture into baking dish.
- Spread preserves evenly over crust. Top with reserved oat mixture.
- Bake for 32 - 36 minutes. Sides should be set and center will be light golden brown. Allow to cool for 2 hours on a wire rack before cutting into, or serve warm with a scoop of ice cream. Enjoy!
