Slow Cooker Apricot Chicken
Slow Cooker Apricot Chicken is a delicious meal that tastes just like takeout, only better. The chicken is tender, and the apricot coating is sweet and tangy. Serve over rice, egg noodles, or chow mien, and top with sesame seeds and chopped green onion.
This delicious recipe is easy to make.
In short, you coat the chicken with dry ingredients, then coat it again in the apricot mixture.
Dump into the crock pot and let it cook.
Making Slow Cooker Apricot Chicken
I’m not a fan of cleaning up.
I do it, but I’d rather be the one making the mess.
Having said that, when I use my crock pot, I always use a liner. They’re awesome.
They really save time during clean up, and I highly recommend them.
So, insert your liner and we’ll get started.
In a large bowl whisk together the flour, pepper, onion powder, and crushed red pepper flakes.
Add more red pepper flakes if you like it hot.
Add the chopped chicken to the dry mixture and stir to evenly coat the chicken.
Use a big spoon to go deep and turn over the chicken. Eventually, most of the dry mixture is coating the chicken.
Meanwhile, in a medium bowl, mix together the preserves, soy sauce, and vinegar.
Next, pour the preserve mixture over the coated chicken, and stir until the chicken is evenly coated.
Place the chicken in the crock pot and set it on LOW for 3.5 hours.
At the 3.5 hour mark, you have 2 things to do.
First, scoop out 1/4 cup of the liquid and pour it into a small bowl. Add the cornstarch and whisk until smooth.
Then, stir this mixture back into the crock pot and recover for another 1/2 hour.
Second, start your rice, egg noodles, chow mien, or whatever you want to serve the apricot chicken over.
Then, if you’re feeling fancy, sprinkle some sesame seeds and julienned green onions over the top.

Slow Cooker Apricot Chicken
Ingredients
- 1/2 cup all-purpose flour
- 1 tsp. black pepper
- 1/2 tsp. onion powder
- 1/8 tsp. crushed red pepper flakes, (or more for more spice)
- 1 1/2 lb. chicken breast, cut into 1" cubes
- 18 oz. apricot preserves
- 1/2 cup low sodium soy sauce
- 2 Tbsp. rice vinegar or apple cider vinegar
- 2 Tbsp. cornstarch
- OPTIONAL: garnish with sliced green onions and sesame seeds
Instructions
- Place optional liner in slow cooker for easy cleanup.
- In large bowl, mix flour, pepper, onion powder, and red pepper flakes.
- Add cubed chicken to flour mixture and stir to evenly coat chicken.
- In medium bowl, mix apricot preserves, soy sauce, and vinegar. Pour over chicken and stir to evenly coat.
- Place chicken in crock pot and cover. Cook on LOW for 3.5 hours.
- In small bowl, whisk 1/4 cup sauce from crock pot with cornstarch until smooth. Add back to crock pot and stir. Recover for remaining 1/2 hour.
- Typically served over rice, chow mien, or egg noodles. Garnish with sliced green onions and a sprinkle of sesame seeds. Enjoy!
