Fiesta Chicken and Rice
Fiesta Chicken and Rice is a quick and easy, but more importantly, delicious meal ready in 30 minutes. Make the whole thing in only one skillet, so there’s less to clean up. There’s perfectly seasoned chicken, rice, vegetables, and diced tomatoes, which is technically a fruit. A well balanced meal.

Everything is in there, so you can eat it out of one bowl after making it in one skillet.
Easy peasy, let’s get cooking.
Making Fiesta Chicken and Rice
Start by mixing all the spices together in one small bowl.
Then, in a large skillet, heat up the olive oil over medium-high heat.
Add the chicken, chopped onions, and 1/2 the mixed spices.
Stir often as the chicken browns, about 3 minutes.
Next, add the rest: the bell peppers, black beans, diced tomatoes, rice, chicken broth, and the rest of the mixed spices.
Bring this to a boil, then cover and reduce the heat to low.
Let this simmer for about 5 minutes, or until the chicken is thoroughly cooked and the rice is almost tender.
Last, but not least, remove from the heat and leave covered for another 5 minutes.
This allows the liquid to be absorbed and the rice to finish cooking.
Time to Eat Fiesta Chicken and Rice.
This meal has it all; protein, starch, veggies, and even fruit (the tomatoes).
I found it easier to eat from a bowl, easier than chasing rice around on a plate.
Also, serve with optional toppings. While still steaming hot, sprinkle freshly grated cheddar cheese on top. So good!
Further, the creaminess of the avocado and sour cream is a great compliment to the spices.
For the “pretty” factor, a sprinkle of chopped cilantro never hurt anybody’s feelings. Ever. I checked.
Storing and Freezing.
This is a great recipe to make and freeze for individual portions later.
Seal it up in a container for about 2 months.
Also, store any leftovers in a tightly sealed container in the refrigerator for about 4 days.
If it takes longer than 4 days to finish it up, you might as well freeze it. Just sayin’.

Fiesta Chicken and Rice
Ingredients
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 2 tsp. cumin
- 1 tsp. paprika
- 1 tsp. dried dill weed
- 1 tsp. kosher salt
- 1 tsp. black pepper
- 2 tsp. olive oil
- 1 lb. boneless skinless chicken breast, cut to bite-sized pieces
- 1 1/2 cups onion (1 small, or 1/2 large)
- 1 red bell pepper, cored and sliced
- 1 green bell pepper, cored and sliced
- 15 oz. can black beans, drained and rinsed
- 15 oz. can fire roasted diced tomatoes (do not drain)
- 1 1/2 cups instant brown rice, see NOTES
- 1 1/4 cups chicken broth
- Optional toppings: freshly grated cheddar cheese, sliced avocado, sour cream (or plain Greek yogurt)
Instructions
- Mix the spices in small bowl (garlic powder thru black pepper). Heat olive oil in skillet on medium-high heat. Add the chicken and onion, then 1/2 of the mixed spices. Stir often as the chicken browns, about 3 minutes.
- Add the bell peppers, black beans, diced tomatoes, rice, chicken broth, and the rest of the mixed spices. Bring to a boil, then reduce heat to low. Cover and allow to simmer for 5 minutes, or until the chicken is cooked through and the rice is mostly tender.
- Remove from heat and leave covered for 5 minutes allowing the liquid to be absorbed.
- Serve as is, or with optional toppings: avocado slices, sour cream, freshly grated cheddar cheese, chopped cilantro. Enjoy!
