Strawberry Banana Bread
Strawberry Banana Bread is the traditional banana bread we all know and love, but with the added sweetness of fresh strawberries. This delicious treat is perfect with breakfast, as a snack, or as a dessert.
First, it’s pretty cool how strawberries turn purple when you bake them.
Second, this recipe makes the perfect amount; two loaves.
One to eat, and one to share or freeze for later. Awesome!
Making Strawberry Banana Bread
Preheat the oven to 325° and grease 2 – 9 x 5″ loaf pans.
Next, dice the strawberries and pat them dry to remove extra moisture.
Also, separate the 3 egg yolks from the whites in 2 separate bowls. You will be using both the yolks and the egg whites.
Then, in a large bowl, cream the sugar and butter until light and fluffy.
Add the egg yolks and beat until blended.
Stir in the mashed bananas, milk, and sour cream and beat until well combined.
Meanwhile, in a small bowl, mix together the flour, baking soda, and salt. Once mixed, add gradually to the banana mixture.
Scrape sides as necessary.
Mix only until well combined, do not over mix.
In a separate bowl, beat the egg whites until stiff peaks form.
Fold in the egg whites, then fold in the diced strawberries.
Divide batter between the 2 loaf pans and bake for 60 – 75 minutes.
I like to rotate the pans half way through for even baking.
Bake the bread until golden brown and until a toothpick inserted into the center comes out clean and dry.
Allow bread to cool in pans for about 15 minutes, then remove pan and let finish cooling on wire racks.

Ingredients
- 1 1/2 cups granulated sugar
- 3/4 cup unsalted butter, softened
- 3 large eggs, separated
- 3 ripe bananas, (or 4 small) mashed
- 1/2 cup milk
- 1/2 cup sour cream, (or plain yogurt)
- 3 cups all-purpose flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup fresh strawberries, diced and paper-towel-dried
Instructions
- Preheat the oven to 325°. Grease 2 - 9 x 5" loaf pans. Dice and pat-dry strawberries with paper towels or hand towel.
- In a large bowl, cream the sugar and butter until light and fluffy. Beat in egg yolks. (Reserve egg whites.)
- Stir in mashed bananas, milk, and sour cream until combined.
- In small bowl, mix together flour, baking soda, and salt. Stir well.
- Add flour mixture gradually into banana mixture.
- In separate bowl, beat egg whites until stiff peaks form. Fold into banana mixture along with the diced strawberries.
- Divide batter between 2 greased loaf pans and bake 60 - 75 minutes, or until golden brown and a toothpick inserted in the center comes out clean and dry. Enjoy!
