Strawberry Cake Mix Cookies Recipe
Strawberry lovers will appreciate this super easy cookie recipe. All that’s needed is a strawberry cake mix, vegetable oil, and a couple eggs. Easy, right? Of course, we all know strawberries and chocolate go so well together, so let’s give these Strawberry Cake Mix Cookies some chocolate chips, too.
These soft cookies not only taste amazing, but they’re fun to make. There’s no fussing about measuring this and that, plus there’s less to spill and get all over your kitchen. Mix the 3 necessary ingredients together for a delicious strawberry cookie, then add some baking chips if you want to. For this blog I split the batter in half and went with white chocolate and dark chocolate. I had a hard time deciding my favorite, so I had to keep sampling them.
Making Strawberry Cookies
Mix your wet ingredients together first. If using beaters, this batter sometimes creeps up after I’ve added half the cake mix in. That’s ok, though, I just mix the rest by hand. Grab a wooden spoon or stiff spatula and mix in the rest of the cake mix. Once that’s done, you can choose to add in your favorite baking chips. The cookies are great plain, soft and delicious, but the chips taste great and look pretty cool.

Strawberry Cake Mix Cookies
- 1/4 cup vegetable oil
- 2 eggs
- 1 box strawberry cake mix
- 2 cups baking chips (optional) like white chocolate or dark chocolate
- Preheat oven to 350°
- In a large bowl mix together the eggs and oil. Start adding cake mix. Batter may creep up beaters, in which case finish mixing by hand. Add the rest of the cake mix.
- If using baking chips, add now.
- Bake for 9 - 11 minutes. Let cool on cookie sheet for about 2 minutes, then finish cooling on wire rack. Enjoy!
