White Cake Mix Cookies

Deliciously soft cookies made from a cake mix, White Cake Mix Cookies are super easy to make and taste amazing. Using a white cake mix, you have the flexibility of keeping them white or adding some food coloring to them. Customize the cookies to match your party’s theme or holiday, then throw in some sprinkles for added fun.

Cookies that stay soft are my favorite, and these easy White Cake Mix Cookies do just that. I colored this batch for an Easter theme of pastels, but you can add whatever color(s) you want to…or none at all. Each bite reveals sprinkles mixed in that add an extra colorful surprise and texture. Using a cake mix is perfect for when you don’t feel like measuring everything out, the cake mix has done it all for you.

So yummy, yet so easy

“Easy” cookies make me want to make them more often. With standard pantry items, a batch of cookies can emerge from your oven quick as can be. For White Cake Mix Cookies, three items are all you literally need; the white cake mix, eggs, and vegetable oil. Sprinkles and food coloring are just perks (and really fun). So let’s do this, let’s make some cookies.

When mixing the ingredients together, please be prepared for the batter to climb up the beaters. I mix the eggs and oil together first, then add about half the cake mix before it starts creepin’ up the beaters. I give in to the fight and finish stirring the rest of the cake mix in using a stiff spatula (or wooden spoon). Add in the sprinkles. To insure there are sprinkles on the tops of each cookie, put some sprinkles on a plate. Now dip each cookie on the sprinkles and place them sprinkles-side-up on the baking sheet. They don’t spread much when baking, so they can be placed pretty close together.

Customize these cookies for whatever the party theme is using the food coloring and/or the sprinkles. For sporting events, use the teams colors, for holidays (like Christmas), use red and green. I used pastel colors for an Easter theme, but how about letting your 5 year old pick his/her own sprinkles out? Now that could get interesting.

Ingredients

  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 box white cake mix
  • 3 Tbsp. sprinkles (optional)
  • food coloring (optional)

Instructions

  • Preheat oven to 350°
  • In a large bowl, mix together the eggs and oil. Start adding cake mix. Batter may creep up beaters in which case, finish mixing by hand. (Batter can be divided at this point if you want 2 different colors using optional food coloring and/or sprinkles.)
  • If using sprinkles, mix into batter. Place extra sprinkles in a plate. Dip each unbaked cookie into sprinkles and place sprinkles-side-up on baking sheet.
  • Bake for 8 - 10 minutes. Let cool on cookie sheet for about 2 minutes, then finish cooling on wire rack. Enjoy!
