Bacon Cheeseburger Chowder

Bacon Cheeseburger Chowder is the kind of dinner that makes people suddenly appear in the kitchen asking, โ€œWhat smells so good?โ€ Crispy bacon, seasoned ground beef, tender potatoes, and vegetables simmer together in a rich, cheesy broth that somehow tastes even better than it sounds. This is a hearty, stick-to-your-ribs chowder that eats like a full meal. Itโ€™s cozy, filling, and packed with enough flavor that nobodyโ€™s going to be hunting through the pantry an hour later looking for snacks. Also, thereโ€™s bacon involved, so expectations are already pretty high.

Making Bacon Cheeseburger Chowder

First, cook bacon in a large stock pot until crispy. Transfer bacon to paper towels to drain, then once cooled, chop and set aside.

Remove most of the bacon grease, leaving about 1 tablespoon in the pot. Add ground beef and cook until browned, breaking it up as it cooks. Season with salt and pepper to taste. Drain grease and transfer beef to a separate bowl.

Add 1 tablespoon butter to the same pot. Once melted, stir in onion, carrots, and celery. Season with dried basil, salt, and pepper. Cook until vegetables are tender and carrots are softened.

Add the remaining 2 tablespoons butter and let melt completely. Sprinkle flour over the vegetables and stir well to coat evenly. Cook for a few minutes to lightly brown the flour and remove the raw flour taste.

Add halved baby potatoes and stir to combine. Pour in chicken broth and bring to a light boil, stirring occasionally.

Once potatoes are fork-tender, return the cooked ground beef to the pot. Add milk, Velveeta, and cream cheese. Cook over low heat, stirring frequently, until cheeses are completely melted and the chowder is smooth and creamy.

Turn off heat and stir in chopped bacon, reserving a little for garnish if desired.

Serve hot with extra bacon on top if youโ€™re feeling fancy. Or hungry. Probably both.

Tips For The Best Chowder

  • Cut potatoes into evenly sized pieces so they cook at the same rate.
  • Donโ€™t boil aggressively after adding the cheese or dairy or the texture can get weird.
  • If the chowder thickens too much after sitting, stir in a splash of milk or broth before reheating.
  • Freshly cracked black pepper on top is chefโ€™s kiss material.

What To Serve With Bacon Cheeseburger Chowder

This chowder is hearty enough to stand alone, but Cheesy Cheddar Garlic Biscuits, Parmesan Garlic Toast, or Cheater Bread Sticks make it downright dangerous. A simple side salad also helps convince everyone this meal has โ€œbalance.โ€

Storage Instructions

Store leftovers covered in the refrigerator for up to 4 days. Reheat gently on the stove or in the microwave, stirring occasionally.

Freeze in serving-size containers for a quick and easy meal when you don’t feel like cooking.

Bacon Cheeseburger Chowder is perfect for cold nights or hungry families making 10 delicious cups.
