Making Cheesy Sausage Potato Bake

1. Cook the sausage and vegetables

Heat a large skillet over medium heat. Add the Italian sausage, diced onion, and diced green bell peppers. Cook until the sausage is completely browned and the vegetables are tender.

Add the minced garlic and cook for about 1 minute, or until fragrant. Remove from the heat and set aside. While still in the skillet, roughly divide into 3 portions.

2. Prep your potatoes and cheese

While the sausage cooks, wash and thinly slice the potatoes. Aim for slices about โ…›-inch thick so they cook evenly and become tender during baking. Divide into 4 portions, because we start and finish with potatoes.

Shred the Colby Jack cheese. We’ll need 3 portions here.

5. Bake your Cheesy Sausage Potato Bake

Cover the baking dish tightly with aluminum foil and bake at 375ยฐF for 1 hour.

Carefully remove the foil and continue baking for 15โ€“20 minutes, or until the potatoes are tender and the cheese on top is melted and golden brown.

If you’re unsure whether the potatoes are done, insert a thin knife into the center. It should slide through the potatoes easily.

6. Let it rest

Remove the casserole from the oven and let it rest for 10โ€“15 minutes before serving.

I know. You just spent all that time making it and now I’m telling you to wait. But this little rest gives the cream and melted cheese time to settle so the casserole is easier to serve.

Pro Tips

Slice the potatoes thinly and evenly. About โ…›-inch is ideal. A mandoline can make quick work of this if you have one, but a sharp knife works just fine.

Don’t skip mixing the seasonings. It might seem like an extra step, but it makes it much easier to distribute every seasoning throughout the casserole.

Use a deep baking dish. Three pounds of potatoes plus sausage, cheese, and cream makes a generously filled casserole. A high-sided 9×13-inch dish gives you the room you need.
