Sausage Mixture:
- 1 lb. Italian sausage, mild or hot
- 1 medium onion, chopped
- 2 medium green bell peppers, chopped
- 1 1/2 Tbsp. garlic
Potatoes/Cheese:
- 3 lbs. yellow potatoes, very thinly sliced (1/8" thick)
- 1 lb. Colby Jack cheese, shredded
Seasoning:
- 1 1/2 tsp. salt
- 1 1/2 tsp. black pepper
- 1 1/2 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. Italian seasoning
- 1/2 tsp. smoked paprika
Topping:
- 1 1/2 cups heavy cream
- 1/2 cup Parmesan cheese, grated
Sausage Mixture:
Heat a large skillet over medium heat. Add the Italian sausage, onion, and green bell peppers. Cook until the sausage is completely browned and the vegetables are tender. Add the minced garlic and cook for about 1 minute, or until fragrant. Remove from the heat and set aside. Divide into 3 portions.
Potatoes/Cheese:
While the sausage cooks, wash and thinly slice the potatoes. Aim for slices about ⅛-inch thick so they cook evenly and become tender during baking. Divide into 4 portions.Shred the Colby Jack cheese. Divide into 3 portions.
Seasoning:
To a small bowl, add the salt, pepper, garlic powder, onion powder, Italian seasoning, and smoked paprika. Stir well to combine.
Assemble:
Preheat the oven to 375°F and lightly grease a deep 9x13-inch baking dish.
Layer 1: spread ¼ of the potatoes, ⅓ of the sausage mixture, ⅓ of the Colby Jack, 1/3 of the seasoning in an even layer.

Layer 4: spread remaining potatoes over top. Pour cream over entire top, then finish with Parmesan cheese. Cover tightly with foil.
Bake for 1 hour, then carefully remove the foil and continue baking for 15–20 minutes, or until the potatoes are tender and the cheese on top is melted and golden brown.
Let it rest for 10-15 minutes before serving. Enjoy!
