Sprinkled Cheesecake Bites

If sugar cookies and cheesecake had a holiday fling, Sprinkled Cheesecake Bites would be the delicious result. These bite-sized desserts are festive, funny-looking in the best way, and dangerously easy to make thanks to premade sugar cookie dough and no-bake cheesecake filling. Translation: maximum wow factor, minimum effort. My favorite kind of recipe.

Perfect for Christmas, Valentineโ€™s Day, birthdays, baby showers, or random Tuesdays, these sprinkle-covered cookie cups are basically tiny edible party hats filled with cheesecake. Letโ€™s get into it.

Sprinkled Cheesecake Bites are a quick and easy dessert that you can deliciously customize with colored sprinkles to whatever theme.

Why Youโ€™ll Love These Sprinkled Cheesecake Bites

  • Made with store-bought sugar cookie dough (no judgment, only applause)
  • Uses store-bought no-bake cheesecake filling (because turning on the oven once is enough)
  • Totally customizable with holiday sprinkles
  • Perfect bite-sized dessert for parties, cookie trays, and potlucks
  • Looks fancy, but secretly takes very little effort (our little secret)
Delicious, bite-sized desserts that support whatever theme you have going with colored sprinkles.

Making Sprinkles Cheesecake Bites

Sprinkle That Dough

Roll the premade sugar cookie dough into balls, then roll each ball in sprinkles until fully coated (heavy or light). Yes, itโ€™s messy. Yes, itโ€™s worth it.

Short on sprinkles? No problem. Just throw on a few at the end, or you can skip them entirelyโ€”your cookies wonโ€™t judge you, and honestly, theyโ€™ll still taste amazing. The sprinkle-free version is just the โ€œcasual sweatpantsโ€ of desserts: not flashy, but still completely acceptable and very comfortable.

Bake in Mini Cups

Place each sprinkle-covered dough ball into a mini muffin pan. Bake for 18 minutes, or until set and lightly golden.

Make the Cookie Cups

Then, as soon as the cookies come out of the oven, press down the center using a spoon, tart shaper, or whatever kitchen tool is clean and nearby. Something rounded helps. This creates the perfect little crater for cheesecake dreams to come true.

Cool Completely (No Cheating)

Let the cookie cups cool completely. If you try to fill them while warm, the cheesecake will melt and youโ€™ll have a situation. A tasty situation, but still.

Fill with No-Bake Cheesecake

Spoon or pipe the no-bake cheesecake filling into the center of each cookie cup. Try not to eat half the filling โ€œfor quality control.โ€

Admire, Then Devour

Add extra sprinkles on top if youโ€™re feeling fancy. Serve immediately or chill until ready to party.

Sprinkled Cheesecake Bites have a sugar cookie crust and no-bake cheesecake center.

Sprinkle Color Ideas for Every Occasion

  • Christmas: Red & green sprinkles
  • Valentineโ€™s Day: Red, pink, and white
  • Birthday: That someone special’s favorite color sprinkles
  • Game Day: Team colors
  • Spring/Easter: Pastels
  • Halloween: Orange, black, and purple

Basically, if thereโ€™s a holiday, thereโ€™s a sprinkle for it.

Storage Tips

Store Sprinkled Cheesecake Bites in an airtight container in the refrigerator for up to 3 days. If they last that long, which they probably wonโ€™t.

Sprinkled Cheesecake Bites are fun to make and super festive for holidays, birthdays, and Game Days, among others.

Notes

I recommend the regular, softer sprinkles for this recipe. Using sugar crystals or non pareils may sound like you’re eating rocks.
