These bite-sized desserts are festive, funny-looking in the best way, and dangerously easy to make thanks to premade sugar cookie dough and no-bake cheesecake filling. Translation: maximum wow factor, minimum effort. My favorite kind of recipe.
Perfect for Christmas, Valentineโs Day, birthdays, baby showers, or random Tuesdays, these sprinkle-covered cookie cups are basically tiny edible party hats filled with cheesecake. Letโs get into it.

Making Sprinkles Cheesecake Bites
Sprinkle That Dough
Roll the premade sugar cookie dough into balls, then roll each ball in sprinkles until fully coated (heavy or light). Yes, itโs messy. Yes, itโs worth it.
Short on sprinkles? No problem. Just throw on a few at the end, or you can skip them entirelyโyour cookies wonโt judge you, and honestly, theyโll still taste amazing. The sprinkle-free version is just the โcasual sweatpantsโ of desserts: not flashy, but still completely acceptable and very comfortable.
Bake in Mini Cups
Place each sprinkle-covered dough ball into a mini muffin pan. Bake for 18 minutes, or until set and lightly golden.
Make the Cookie Cups
Then, as soon as the cookies come out of the oven, press down the center using a spoon, tart shaper, or whatever kitchen tool is clean and nearby. Something rounded helps. This creates the perfect little crater for cheesecake dreams to come true.
Cool Completely (No Cheating)
Let the cookie cups cool completely. If you try to fill them while warm, the cheesecake will melt and youโll have a situation. A tasty situation, but still.
Fill with No-Bake Cheesecake
Spoon or pipe the no-bake cheesecake filling into the center of each cookie cup. Try not to eat half the filling โfor quality control.โ

Sprinkled Cheesecake Bites
Ingredients
- 16 oz. bag sugar cookie dough, 24 count (such as Pillsbury)
- 1 cup No Bake Cheesecake (such as Philadelphia)
- 1/4 cup sprinkles (avoid non pareils)
Instructions
- Preheat oven to 350ยฐ and spray mini cup pan with non-stick spray.
- Roll each cookie dough in sprinkles as heavy or light as you prefer. Place one cookie in each mini cup.
- Bake for 18 minutes. Remove from oven and gently press down each center with rounded tip, like a rounded spatula handle. Cool completely.
- Fill each center with cheesecake filling. You can simply spoon it in, or go fancy and use a piping bag and tip. Keep refrigerated. Enjoy!
