Slow Cooker Apricot Chicken

An easy and tasty sweet and tangy chicken recipe made in your crock pot.

Materials

  • 1/2 cup all-purpose flour
  • 1 tsp. black pepper
  • 1/2 tsp. onion powder
  • 1/8 tsp. crushed red pepper flakes, (or more for more spice)
  • 1 1/2 lb. chicken breast, cut into 1" cubes
  • 18 oz. apricot preserves
  • 1/2 cup low sodium soy sauce
  • 2 Tbsp. rice vinegar or apple cider vinegar
  • 2 Tbsp. cornstarch
  • OPTIONAL: garnish with sliced green onions and sesame seeds

Instructions

  • Place optional liner in slow cooker for easy cleanup.
  • In large bowl, mix flour, pepper, onion powder, and red pepper flakes.
  • Add cubed chicken to flour mixture and stir to evenly coat chicken.
  • In medium bowl, mix apricot preserves, soy sauce, and vinegar. Pour over chicken and stir to evenly coat.
  • Place chicken in crock pot and cover. Cook on LOW for 3.5 hours.
  • In small bowl, whisk 1/4 cup sauce from crock pot with cornstarch until smooth. Add back to crock pot and stir. Recover for remaining 1/2 hour.
  • Typically served over rice, chow mien, or egg noodles. Garnish with sliced green onions and a sprinkle of sesame seeds. Enjoy!

Notes

Pineapple preserves are a fun alternative to the apricot.
