Slow Cooker Apricot Chicken
An easy and tasty sweet and tangy chicken recipe made in your crock pot.

Materials

apricot preserves

low sodium soy sauce

rice vinegar or apple cider vinegar

cornstarch
OPTIONAL: garnish with sliced green onions and sesame seeds
Instructions
Place optional liner in slow cooker for easy cleanup.
In large bowl, mix flour, pepper, onion powder, and red pepper flakes.
Add cubed chicken to flour mixture and stir to evenly coat chicken.
In medium bowl, mix apricot preserves, soy sauce, and vinegar. Pour over chicken and stir to evenly coat.
Place chicken in crock pot and cover. Cook on LOW for 3.5 hours.
In small bowl, whisk 1/4 cup sauce from crock pot with cornstarch until smooth. Add back to crock pot and stir. Recover for remaining 1/2 hour.
Typically served over rice, chow mien, or egg noodles. Garnish with sliced green onions and a sprinkle of sesame seeds. Enjoy!
Notes
Pineapple preserves are a fun alternative to the apricot.
